Transforming three traditional houses into a new bakery

This combined café and bakery is located among the historic wooden houses of Stavanger’s town centre. The challenge here was to rebuild and extend 3 traditional structures so as to create an expansive and functionally contiguous space within the street plan, unobstructed by timber columns. At the same time, it was our aim to exploit the potential of the existing complex structural character of the building. This was achieved firstly by opening up the first floor of all three buildings, and then by constructively utilising the old timber dividing walls and sections of the tier of joists. In this way, structural obstructions were removed from the ground floor, allowing the three buildings to hover over the site, demarcating their own separate functional areas: the café in the corner house, purchasing and sales in the middle building, and the bakery and personnel department in what was previously a residential building.

The façade of the middle of the three buildings has been dismantled and replaced with a large glass façade that projects the site towards the town’s main market square, defining a new main entrance.

Sections of traditional surfaces have been exposed to view and are combined with new materials. The interior is inspired by a “cake aesthetic”, in which the sales counters are made of adaptable carts enamelled to simulate the glazed colours of icing, mosaic tiles cover the kitchen walls, cake shapes are moulded into the concrete floor, the tabletops are curved and painted in ice-cream colours, and the lighting strips moulded into the shape of doughnuts.
